Canadian mushroom growers sold 151,894 short tons of mushrooms in 2021, up 3.9% compared with 2020, mainly because of increases in cultivated and harvested area.
Cultivated (+1.8%) and harvested (+4.7%) area rose in 2021, as the industry recovered from COVID-19 pandemic losses. A decline in area was observed in 2020, as farmers reduced growing capacity in response to a surplus of unsold mushrooms and lower demand for in-person restaurant dining.
The pandemic prompted growth in sales of processed mushrooms in 2020, as farmers shifted some of their production away from fresh mushrooms. This increase continued in 2021, with farmers producing 13,155 short tons (+3.4%) of processed mushrooms. The amount of fresh mushrooms produced recovered in 2021 (+4.0%), at 138,739 short tons. The increase in 2021 followed a decline in 2020 which was likely attributable to restaurant closures for in person dining, and restrictions at the onset of the pandemic.
The total value of mushrooms sold rose 5.5% to $653.5 million in 2021, because of higher prices and quantity produced for both fresh and processed mushrooms.
Canada exported 67,937 short tons of Agaricus mushrooms in 2021, up 8.9% from a year earlier, with the United States being the top importer (99.3%).
