In 2025, total production of chicken, turkey and stewing hens increased 0.7% year over year to 1.6 billion kilograms, while total poultry sales grew 0.5% over the same period to $4.5 billion. Chicken production, which accounted for over 90% of total poultry production in Canada, drove these increases, more than offsetting a steep decline in turkey production.
Canadian egg production rose to a record 997.2 million dozen eggs in 2025, up 9.2% from 2024.
Fifth consecutive year-over-year increase in chicken production
Total chicken production, including stewing hens, grew 2.1% year over year to 1.4 billion kilograms in 2025. Chicken production increased in all provinces, except Saskatchewan (-1.0%). Increases were led by Alberta (+3.8%), Ontario (+3.2%) and Manitoba (+2.6%). Combined, Ontario and Quebec accounted for almost two-thirds of all chicken production (including stewing hens) in Canada.
Year over year, total chicken sales (including stewing hens) (+2.3%) increased at nearly the same pace as production to reach $4.1 billion in 2025, as prices remained relatively stable at the national level. Sales grew in all provinces, except for Saskatchewan (-4.1%).
Turkey production and sales decline for second consecutive year
Total turkey production fell by 12.3% year over year to 139.5 million kilograms in 2025, with double-digit declines in Saskatchewan (-19.8%), Alberta (-16.6%), British Columbia (-13.7%) and Ontario (-13.1%), following reductions in Canadian production allocations. Turkey production accounted for 8.8% of total poultry production in Canada in 2025.
Total turkey sales dropped 14.4% from 2024 to $399.6 million in 2025, as producer prices decreased.
Egg production sees strongest growth since 1957
Canadian egg farmers produced 997.2 million dozen eggs in 2025. The 9.2% increase from 2024 was the highest year-over-year increase since 1957, driven by rising consumer demand for table eggs. Since 2005, egg production has reached a new record high each year.
Total egg sales, which include both hatchery eggs and eggs for consumption, rose 9.8% year-over-year to $2.5 billion, further supported by higher average prices for eggs for consumption.
Hatchery egg production, which accounted for more than one-fifth (22.0%) of total egg sales, rose to 82.9 million dozen (+3.3%) in 2025, the fifth consecutive annual increase.

Data on frozen eggs and poultry meats include chicken, turkey and duck stocks, as well as stocks of egg whites, egg yolks and dried eggs. Data on egg production include production, disposition, home consumption and egg prices.
Weekly and monthly data on poultry and eggs have been revised back to January 2021. This is the result of revisions to administrative data and survey data.
