Canadian maple producers harvested 11.3 million gallons of maple syrup in 2021, down 21.0% from 2020. The decline follows two consecutive record years of production. The lower production was the result of a short maple season brought on by warm spring temperatures felt across all four maple-producing provinces.

In 2021, total production of maple syrup in Quebec, the leading producing province, was 10.0 million gallons, while production in New Brunswick was 785.7 thousand gallons. Producers in Ontario and Nova Scotia reported 461.9 thousand and 36.0 thousand gallons of maple syrup respectively in 2021.

Global demand for Canadian maple syrup continues to grow, as producers exported 1.3 million gallons more during the first three quarters of 2021, compared with the same period in 2020, resulting in a 21.4% increase. A total of 7.6 million gallons were exported in 2021, compared with 6.3 million gallons during the same period in 2020. In 2021, the Federation of Quebec Maple Syrup Producers accessed its reserves to meet export demands.
