Poultry and egg statistics, October 2017

Egg production rose 3.0% from October 2016 to 65.1 million dozen in October.

In November, placements of hatchery chicks on farms increased 3.7% compared with November 2016, to 60 million birds.

Stocks of frozen poultry meat in cold storage decreased 5.3% from December 1, 2016, to 79 366 tonnes on December 1.

In celebration of the country's 150th birthday, Statistics Canada is presenting snapshots from our rich statistical history.

Canada has tracked poultry and egg statistics in one form or another for nearly 100 years. Egg production data have been available annually since 1920. Over the last 97 years, egg production in Canada has increased from 112.1 million dozen in 1920 to 747.7 million dozen in 2016, a nearly sevenfold increase.

In 1941, chickens, including stewing hens, accounted for 84.7% of all poultry meat produced, and remained virtually unchanged at 86.5% in 2016. Canadian farmers produced 1.2 million tonnes of chicken meat in 2016, compared with 89 480 tonnes in 1941. There were 183 370 tonnes of turkey meat produced in 2016, compared with 16 108 tonnes in 1941.

The average eviscerated weight per chicken was 1.68 kg in 2016, up 9.5% from 1.53 kg in 2002, while turkeys increased 13.2% to 8.43 kg per bird over the same period.
